Chef Vincenzo Regine, a true artist of Mediterranean flavors
Chef Vincenzo Regine leads the new culinary vision of the Domaine des Andéols. Born on the island of Ischia, he was raised among the aromas of the Mediterranean sea and soil, developing an early love for generous, authentic cuisine.

At just 22, he left his native island to explore Europe’s diverse culinary cultures, making stops in Belgium and France, where he honed his craft in prestigious Michelin-starred establishments.
Curious and creative, he forged a culinary signature where each dish becomes a true work of art—bursting with color, texture, and flavor. Now Executive Chef of the Domaine des Andéols, Vincenzo draws inspiration from the surrounding landscape: olives, citrus, figs, lavender, thyme, and rosemary shape his creations. Like an artist before a canvas, he composes his dishes as luminous and harmonious paintings, blending Mediterranean instinct with French refinement. His menu, entitled “At the Crossroads”, celebrates the Domaine’s garden harvest, elevated by his Italian heritage.


A signature dish inspired by Olivier Massart’s travels
The Executive Chef graciously shared the story behind one of his signature dishes, a heartfelt tribute to Olivier Massart, inspired by one of his travel tales.
“Yes, absolutely. There’s one creation in particular that means a lot to me: Souvenir du Volcan (Memory of the Volcano). This dish was born of a dual inspiration : the journey of Mr. Massart, founder of the Domaine, and his 1966 trip to Sicily with a renowned photographer. Together, they climbed the slopes of Mount Etna, capturing the raw power of the volcano—coal, lava, and living earth.
Reading his account and seeing the captivating images sparked the idea: to express this volcanic world through a Mediterranean culinary lens.”

The creative process:
- Volcano preparation: molded from black salt crust and vegetable charcoal, filled with dried herbs from the garrigue.
- Fish preparation: pan-seared fillet marinated in squid ink, finished on a skewer over glowing coals.
- Dramatic presentation: the herbs are lit in the crater at service, releasing aromatic and theatrical smoke.
